Chistorra Potato Skillet

Ingredients
  

  • 5 small potatoes, sliced
  • 1 medium yellow onion, sliced
  • ½ cup olive oil
  • 4 ounces Chistorra Sausage, sliced diagonal
  • 5 large eggs
  • Salt & pepper

Instructions
 

  • Heat 2 tbsps oil in a frying pan over medium heat. Add potatoes, onions and fry until tender and browned.  Season with salt & pepper.  When the potatoes and onions are done, remove them from the pan. Keep warm. Add 1 tbsp oil in same pan. Add sausage and fry briefly until warmed through.  Remove from pan, keep warm.
  • In same pan, fry the eggs sunny side up in a tbsp of olive oil. Add onions and potatoes back into pan, season with parsley, serve.
